Pumpkin on pasta with dried tomatoes is a flavorful and umami packed pasta dish. It’s simple to make with just a few ingredients, and loaded with comforting ingredients such as parmesan, heavy cream and thyme.

This is the perfect weeknight dinner and why don’t you double the recipe and freeze leftover sauce? This way you have more creamy parmesan pumpkin pasta which I know you will appreciate on a dreary Tuesday with short on time.

Pumpkin on pasta with dried tomatoes

Recipe for pasta with pumpkin and dried tomatoes. A delicious family dinner in autumnal colors. Great Soulfood in bad weather.

INGREDIENTS

250 g pasta (200-250 g)

1/2 p. Pumpkin (400-500 g)

1 kl. onion

2 pieces of garlic cloves

1 glass of dried tomatoes in oil (90-100 g are cooked with)

350 ml vegetable broth

2 tablespoons tomato paste

Parmesan

salt and pepper

Handful of parsley

optional basil

olive oil

INSTRUCTIONS

Halve the pumpkin and core it. Then cut into bite-sized cubes. If you like me, the shell does not like to peel before.

Peel the onion and cut into small pieces. Peel the garlic and chop finely.

Drain the dried tomatoes and then cut into small cubes. Here I cut about 90-100 g to cook. And some more tomatoes, which I later stirred under the pasta.

Chop parsley.

Sauté pumpkin cubes with the onion cubes in a pan with a little olive oil for about 5 minutes.

Add the dried tomatoes with the garlic and sauté.

Add the tomato puree and roast.

Deglaze with the broth, add the pumpkin and cook for about 15 minutes.

Incidentally, prepare the spaghetti according to the package instructions.

Season the sauce. Finally I put the spaghetti directly into the pan and added a few more dried tomatoes. Finally, taste again.

Serve with parmesan and sprinkle with parsley or basil.
