Best Egg Loaf Recipe - Keto French Toast


Serves: 4  
Prep Time: 5 minutes  
Cooking Time: 15 minutes

INGREDIENTS

  • 4-5 drops of Monk Fruit extract (or 2-3 drops liquid stevia)
  • Dash of salt
  • 4 oz cream cheese
  • 4 eggs
  • 2 tbsp butter
  • 1 tsp baking powder
  • ½ tsp ground cinnamon

For frying (optional):

  • 1-2 tbsp butter


INSTRUCTIONS

  1. Preheat your oven to 350 and line a square baking pan with parchment paper. This will keep it from sticking and will make it 100 times easier to remove without breaking.
  2. Soften your cream cheese and butter: if you have softened cream cheese and butter, skip this step. You can melt them in a small bowl in the microwave for up to 1 minute, but they shouldn’t be hot when you blend everything together.
  3. Place your softened/melted cream cheese and butter, eggs, baking powder, cinnamon, and salt in a blender or blender cup.  Blend until the mixture looks liquidy and everything is incorporated and smooth.
  4. Pour your mixture into your square baking dish (lined with parchment paper) and bake for 15 minutes or until a little golden brown.
  5. Let cool for 5-10 minutes, then cut into 4 even “French toast” slices and fry with some butter in a skillet or eat as is.
  6. The traditional way to eat this is as French toast which you can add some additional toppings to or just some good ole sugar-free maple syrup J You can also use this for a breakfast sandwich and add egg and a sausage patty. (I like to fry in butter so both sides get a little crispy [this makes it more like bread] then top with butter, maybe nuts or fruit, and some maple syrup)
