Why can’t vegetables be plentiful and yummy all year long? I don’t know, but I intend to enjoy them while they’re around. This Summer Vegetable Tian is the perfect easy side to showcase the medley of delicious vegetables the summer has to offer.
I like to enjoy the natural subtle flavors of vegetables. I’m not all for frying or smothering with thick, rich sauces, but sometimes I want something a little more. This Summer Vegetable Tian lands half way between both worlds. The vegetables are sliced thin, seasoned only with a little salt, pepper, and thyme, and then topped with just a small amount of flavorful cheese. Roasting the vegetables magnifies their flavor and gives them just a hint of sweetness. It’s veggietastic.

INGREDIENTS
YOU NEED A TARTEFORM 34x13CM OR 26CM DIAMETER
FOR THE DOUGH - THE PREPARATION TIME OF THE RECIPE IS INDICATED WITHOUT DAMN.
- 1 Shortcrust pastry, freshly made - alternatively from the refrigerated shelf, eg auntie Fanny's quiche and tarts dough
FOR THE FILLING
- 150 g of sour cream
- 125 g mozzarella - finely chopped
- 60 g Parmesan - freshly grated
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg - freshly grated
- 1 tbsp lime juice, freshly squeezed - alternatively lemon juice, freshly pressed
- 2 tbsp thyme leaves - fresh
FOR THE VEGETABLE ERASES
- 1 pinch of patience - big
- 2 Zuccini YELLOW - medium in size
- 2 Zuccini GREEN - medium in size, 1 of them is a substitute
- 2 carrots ORANGE - medium size, if possible the same size
- 2 carrots VIOLET - medium, if possible the same size
- 2 tablespoons olive oil - to brush
MANUAL
- Place the prepared or purchased dough in a tart tin greased with butter . I have a basic recipe for a salty shortcrust pastry, have a look: Salziger Shortcrust pastry - my basic recipe
- Preheat the oven to 200 degrees upper-lower heat.
- For filling all the ingredients together mix and in addition to taste to taste .
- The filling on the tart bottom evenly distributed .
- Cut the vegetables with a peeler (my recommendation) or a vegetable slicer into thin strips and sort. The stripes should be approximately uniform in size . If necessary, you can still cut in half lengthwise , or if you have rolled it a little cut .
- SMALL TIP: If the vegetable strips do not roll well , then fry them in portions in the microwave at 180 watts for 1-2 minutes . Or for about 2 minutes in the heated oven . Then they are smoother.
- If you have completely covered your tart with vegetables, then brush with the 2 tbsp olive oil .
- Then you give the tart for about 50 minutes in the preheated oven. After half of the time, you cover the tart with eg aluminum foil , so that the vegetables are not too dark.
