I have been trying my hardest to work in more green veggies into our diets. When low-carbing it’s easy to fall into a delicious pit of bacon and cheese and just push your greens to the back burner. Salads have always been pretty blah to me and a plate of steamed broccoli is just not appetizing.
So after tinkering a bit, I finally came up with these savory broccoli and cheese waffles. They are crispy, cheesy and full of flavor! Especially when topped with a few poached eggs or a smear of flavored cream cheese! Here in Germany there is a brand that makes a whipped mushroom cream cheese. So good!
Broccoli & Cheddar Keto Waffles
Perfect for breakfast or as a substitute for bread, you can't go wrong with my Broccoli & Cheddar Keto Waffles!

Cook Time: 5 minutes
Total Time: 10 minutes
Servings: 1 person
Ingredients
- ½ tsp garlic powder
- ½ tsp dried minced onion
- salt and pepper, to taste
- cooking spray
- ⅓ cup raw broccoli, finely chopped 20g
- ¼ cup cheddar cheese, shredded 28g
- 1 egg
Instructions
- Plug in your waffle iron to come to temperature.
- In a small bowl, crack and beat the egg with a fork.
- Fold in the broccoli, cheese, garlic powder, onion, salt and pepper.
- When the waffle iron is ready, spray with cooking spray (if needed) and add your egg mixture. Close the waffle iron and let it cook until the light goes out, indicating it has finished one cycle.
- Close the lid again and let it cook through another cycle.
- When finished, carefully remove from the waffle iron with tongs or a fork.
- Enjoy! Serve with butter, sour cream or ranch dressing.
