We have been eating broccoli quite a bit around here.   It is my favorite vegetable so we always have it around the house.  My little baby who is not so little anymore is eating pretty much everything that we do.  She is my first baby that will eat everything.  Fruits, vegetables,  you name it she will like it.  Sometimes I try a tiny taste of her baby vegetables and gag.  She gobbles those things down like nobodies business.   She especially loves broccoli.   What kid likes broccoli?  Tonight I had some broccoli on my plate and she scooted all the way across the room.  She looked at me with puppy dog eyes begging me for some.  She loves it!  I am really hoping that this love for all food lasts.

Broccoli Apple Salad


This delicious Broccoli Apple Salad is one of the best ways you can enjoy fresh broccoli! It's packed with nutritious ingredients and sure to be a crowd pleaser, everyone will love this lighter dressing!

Total Time 20 minutes

Ingredients

  • 1 cup matchstick carrots , roughly chopped
  • 1/2 cup golden raisins or dried cranberries
  • 1/4 cup chopped red onion
  • 4 cups small diced broccoli florets
  • 2 small gala apples , cored and diced
  • 1 cup walnuts

Dressing

  • 3/4 cup plain Greek yogurt
  • 1/3 cup Hellman's or Best Foods Mayonnaise (full fat)
  • 1 1/2 Tbsp apple cider vinegar
  • 3 Tbsp honey
  • Salt


Instructions

  1. For the dressing: In a medium mixing bowl whisk together Greek yogurt, mayonnaise, vinegar, honey and season with salt to taste (about 1/4 tsp). Chill until ready to use.
  2. For the salad: In a salad bowl toss together broccoli, apples, walnuts, carrots, raisins or cranberries and red onion. Pour in dressing and toss until evenly coated.
