I’ve been on a coconut kick lately. Coconut milk in my smoothies. Coconut yogurt on top of everything. And coconut butter for a midday snack (yes, spoon straight into the jar – no shame).

So it was only a matter of time before I fused my favorite new snack with my favorite dark chocolate! These cups are a match made in heaven. Let me show you how!

3 Ingredient Keto Chocolate Coconut Cups


3 Ingredient Keto Chocolate Coconut Cups (Paleo, Vegan, Sugar Free)- An easy, homemade three ingredient healthy dessert or snack which is low carb, dairy free and gluten free. A guilt-free way to keep hunger at bay while satisfying the sweet tooth! 

Prep Time: 2 minutes
Cook Time: 3 minutes
Total Time: 5 minutes 
Servings: 18 cups 

Ingredients

For the keto version

  • 1/2 cup coconut oil
  • 1 serving sweetener of choice See notes
  • 1/2 cup coconut butter, melted
  • 1/2 cup cocoa powder

For the non-keto version

  • 1/2 cup coconut butter, melted
  • 1 cup chocolate chips of choice


Instructions

  1. Line a 18-count mini muffin tin with mini muffin liners and set aside. 
  2. In a microwave safe bowl or stove top, melt your coconut oil. Add your cocoa powder and mix until fully combined and no clumps remain. If you use opt to add a sweetener, add it here now too. 
  3. Moving quickly, coat the bottom and sides of the muffin liners with melted chocolate. Ensure a little is leftover to top with later. Place the chocolate coated muffin tins in the freezer to firm up. 
  4. Once firm, divide the coconut butter amongst the cups. Top with the remaining chocolate and freeze until firm.
