Strawberry Cheesecake Pudding Shots Recipe

We spent a lot of our weekend working on yard work and a few things around the house, but it was really nice actually.  We’ve been so busy we needed a weekend to just stick close to home. On Friday night we got together with some friends and I whipped up these strawberry cheesecake pudding shots as a special little boozy treat!

It’s strawberry season! It’s officially summer! All good reasons to make these immediately. Have you ever had pudding shots? They’re kind of like dessert and a mini cocktail all in one. Also known as utter perfection. Even if I do say so myself.

Ingredients

  • Whipped Cream (or more Cool Whip), for garnish
  • 1 cup Graham Cracker Crumbs, divided
  • 4-5 Strawberries washed and sliced
  • 3 oz box Instant Cheesecake flavored Pudding Mix
  • 1 cup cold Milk
  • 2/3 cup Vodka
  • 1/3 cup Strawberry Syrup
  • 8 oz Cool Whip Whipped Topping

Instructions


  1. Place the pudding shot cups on a large baking sheet. 
  2. Add 1 tablespoon of Graham cracker crumbs to the bottom of each cup; set aside.
  3. Pour the cheesecake flavored pudding mix into a medium mixing bowl. 
  4. Add one cup of cold milk and whisk until smooth and creamy.
  5. Add 2/3 of a cup of vodka and 1/3 cup of strawberry syrup to the pudding mixture; stir well to incorporate.
  6. Fold in 8 ounces of Cool Whip into the cheesecake pudding mixture, and continue to fold until the ingredients are well mixed, and the cheesecake pudding is light and fluffy.
  7. Spoon the the cheesecake pudding mixture into the prepared pudding shot cups, filling up to the top.
  8. Chill for at least 1 hour. If you are not serving the pudding shots right away, you can place lids on the plastic cups and chill overnight.
  9. Before serving, add a dollop of whipped cream (or cool whip) to the top of each pudding shot. Sprinkle additional graham cracker crumbs on top of the whipped cream. Garnish with ½ strawberry slices.
